Any aesthetic improvements to the toe-kick area of the dish collection opening must not seal off the floor sink within the space. Any improvements must allow for any plumbing backup from this drain to be promptly visible at the dish collection side rather than potentially accumulating in the partially enclosed pathway to the dishwashing area.

Several toe kicks are present at the make line and buffet. These toe kicks are made to easily removable for cleaning. Once operational, flooring beneath the cook line must be maintained in sanitary condition. IF cleaning is insufficient, if pest issues result inside the base area, OR if these toe kicks become damaged, they will need to be eliminated by the operator/ owner.
