In practice, it will not be a food contact surface, but because of its location in the kitchen space must be finished appropriately to be a contact service. Per discussion the top is solid maple. Apply a food grade oil intended for butcher blocks or bakers tables rather than poly, paint or typical finish products.

La Bestia oven is pending NSF approval from a third-party evaluator. Provide evaluator’s final report to show oven meets NSF or similar standards as well as UL or similar standards. Approval of the oven must be received acknowledged and confirmed by environmental health as well as fire prevention prior to use.
